The soil is silty and sandy with limestone and volcanic deposits. Grapes are harvested by hand, destemmed and undergo a cold maceration for a number of hours. Alcoholic fermentation is followed by a maceration on the skins for one week and at least 16 months ageing in cement tanks. The wine is then aged for at least four months in the bottle before release. |
