Tasting Notes: Cassidy is Seven Oxen’s Rhône blend of 70% dry-farmed Grenache and 30% Mourvèdre, and is one of Seven Oxen’s signature wines. An easy drinking, crowd pleasing blend. Bright and fruit-forward on the nose with notes of strawberry jam, black pepper, leather and roasted meats. Wild strawberries, raspberries and tobacco on the palate with a smooth tannic finish.
Vineyard: Hand-harvested from the Templeton Gap side of the vineyard, where our Grenache block thrives dry-farmed and our Mourvèdre proves to be a more finicky vine to grow and requires regular watering to combat the intense Paso Robles heat.
Winemaking: Our Grenache and Mourvèdre grapes were hand harvested, destemmed, and then fermented separately in open top fermenters for approximately 15 days, with daily punchdowns twice daily and then once daily until fermentation was complete. The 2018 lots of Grenache and Mourvèdre were aged separately for approximately 18 months in 100% neutral French oak barrels. Ahead of blending every barrel was tasted individually to determine the right combination for the most balanced blend.
