We harvested on September 26th at 25.5° brix, 3.25 pH and 7.7 acidity. The grapes were whole cluster pressed, the juice chilled overnight, then transferred the next day to barrel with most of the solids for fermentation. We used 100% one-year old François Frères Burgundy barrels, barrels that were used once for Chardonnay. One-year old barrels have a nice, subtle oak character that is perfect for Roussanne—in fact the old vine Roussanne from Beaucastel is also aged in one-year old Burgundy barrels! This wine was aged in barrel for a total of 18 months. The first year it was aged on the lees in the one-year old barrels. It was then racked off the lees, fined and cold stabilized, then returned to neutral French oak barrels for an additional 6 months. This extra step and time allow the wine to fall nice and clear, so that we can bottle without filtration.
This wine is 100% Roussanne from Block 10 at Bien Nacido Vineyard. This is a custom block, planted exclusively for Qupé beginning in 1997. Roussanne is a late ripening varietal, and this west facing Hillside gives the vines a lot of sun exposure during the growing season. The block is planted to the Tablas Creek clone of Roussanne, which came originally from Château de Beaucastel in Châteauneufdu-Pape. The wine that Beaucastel makes from their old vine Roussanne was and is Qupé founder’s main inspiration for making this as a single vineyard, single varietal wine
