Le Clos des Corvées de Citeau is in the center of the village of Meursault. It is the estate's monopole, formerly owned by Cistercian monks, and is surrounded by tall walls creating a micro-climate that encourages early growth and ripening. This plot, on a rich clay soil, produces an equally rich wine that is dense and concentrated, with toasted bread and citrus notes and a delicious crispness.
While many native Burgundians are enmeshed in wine from an early age, few start formal training as early as Romaric Chavy. Beginning his training at wine school aged just twelve years old, Romaric honed his craft during apprenticeships at prominent wineries like Domaine d’Aupilhac and Radford-Dale. Now holding the reigns of his family’s 15ha estate, the forty-something possesses the technical nous and know-how of one much older.
Stretched across the villages of Puligny-Montrachet, Meursault, St Aubin, Volnay, and Pommard, the domaine contains some of the Cote d’Or’s most exciting vineyards. These include the famed ‘Clos Corvées de Citeaux’ monopole in Meursault, as well as Premier Cru holdings in Meursault and Puligny-Montrachet. Farming follows the lutte raisonee methodology, minimal intervention farming is used to ensure fruit of only the highest calibre. These techniques include arduous manual ploughing, which has allowed the Domaine to be herbicide free for over 30 years.
